Since I work nights, I typically like to go early the first Saturday so I can mill around the Equine barn and get an up-close glimpse of the draft horses. I absolutely love to watch the competitions too.
The crowd usually doesn't gather TOO much until after noonish.
It's wonderful to walk around and see the exhibits around 9 a.m. since
it's not crowded yet.
Other than that, it's farm animals, farm animals and new farm equipment exhibits and FOOD. (A, I know that's yer personal favorite.)
You can also shop for western wear (love the boots!) as well.
Various animal judging goes on at different times throughout the day in many arenas. I'm partial to the guernsey cattle and bunny rabbits.
Llamas have been a hit in recent years as well.
If you go, be prepared to walk. It's great exercise!
As I said, since I work nights I miss the other great stuff during the week.
The sheep-to-shawl contest is quite interesting (and competitive).
The rodeo is usually mid-week, but I think the high school rodeo is Saturday evening.
Here' s a list of the schedule:

Check the visitor's information tab for parking and costs.
If you do go, make sure you get one of those baked potatoes.
You'll love it, unless you're a healthy eater.
